Capra Organic Goats Cheese produces a multi award-winning range of handmade, certified organic goat's cheeses on their farm in far East Gippsland, Victoria. This family-owned and operated business handcrafts several styles of delicate, French-style cheeses, and are renowned for their superior quality.
They use only the milk from their own herd of organic dairy goats, which encompasses the breeds British Alpine, Saanen, Toggenburg, Australian Brown and Australian Melaan. Emma-Lee and Matthew Gurnsey have developed their organic herd to produce healthy, free-ranging goats that supply top quality milk for their fresh and mature cheeses. The goat herd has access to a wide range of predominantly native grasses, herbs and shrubs, reminiscent of their natural feeding habits.
The cheese is made fresh on the farm, every day of the year in Capra's A-Grade, purpose-built fromagerie, so you can be assured that it is made from only the very freshest milk. The cheese also reflects the specific local character of the one farm and the one herd.
All cheeses are free of preservatives, and are made using vegetarian, non-GMO rennet. The curds are carefully hand-ladled to ensure the delicate curd matrix is not broken, and are left to drain gently under their own weight in the traditional French style. Only the finest sea salt is used in the Capra Cheese range, and care is taken not to oversalt the cheeses.
Generally much lower in fat and kilojoules than traditional cow’s milk cheeses, goat’s cheese also contains significant amounts of protein, vitamins and minerals. Cheeses made from organic goat’s milk are typically higher in potassium, Vitamin A, thiamine and niacin. And because Capra Organic Goat’s Cheese is more easily digested, for those with lactose intolerance, it is an excellent alternative.
Being certified organic is a quality guarantee for you, the consumer, that our product contains absolutely no chemical residues, whether it be from fertilizers, herbicides, drenches, GMO’s or hormones. You can be sure our cheese is made from only the freshest, pure organic goat’s milk.
‘Mia Mia Farm' - the home of Capra Cheese, is situated on 87 acres of undulating granite foothills, nestled between Mount Lookout and Mount Taylor, just north of Bairnsdale in East Gippsland. All milk comes from the farm, so these are true farmhouse cheeses, handmade on the farm from 100% certified organic goat's milk.

FRESCO ~ Fromage Blanc/Fromage Frais
This soft, fresh goat's milk curd is light and creamy with a subtle lactic sweetness. Fresco is deliciously moist and fluffy, and exhibits floral overtones with a refreshing acidity. Available salted or unsalted in 100g or 250g tubs.

ALLEGRO ~ Fresh firm Chèvre
This firm, fresh goat's cheese is creamy and gently acidic, with a dense and sensuous texture. Its slight citrus tang and delicately clean finish make it a delight to savour.

MOUNTAIN ASH ~ Fresh ash-coated pyramid
This traditional French-style pyramid is a deliciously fresh cheese with a delicate sweetness, that is balanced by it’s gentle acidity. Its elegant ash coating (or ‘sel noir’ ~ meaning black salt) forms a natural rind and neutralizes the acidity of the cheese’s surface. Available in pyramid shapes (190g).

CAMEO ~ Mature ashed & white mould cheese
Cameo is an exquisite, robust goat’s milk cheese that is lightly ashed, then matured to form a natural white mould rind. It is aromatic, intense and slightly sweet, with a lingering mouthfeel, a hint of blue tones and a creamy texture. Available in barrel shapes (120g).
VELVET ~ Mature white mould cheese
Capra’s signature cheese is a carefully matured, French-style barrel with a white mould rind. When young, this cheese is nutty, with a mushroomy aroma and subtle suggestions of truffle. Aged, it develops a sweet, full-bodied richness.

SERENADE ~ Mature heart-shaped cheese Capra’s stunning heart-shaped cheese has a velvety, white mould rind with a striking ash layer that runs through the centre of the cheese. Serenade is smooth and rich, with complex cheddar and blue overtones and a heady hint of spiciness when fully mature.
